For this recipe, you will need:
- 2 slices thickly sliced sour dough bread, toasted cooled
- 160 gram canned tuna
- 3 tbs hummus
Flake the canned tuna into a bowl. Mix in the 3 tablespoons of hummus and add as much or as little as you like of the following
- 1 stalk green onion
- 2 tbs diced cucumber
- 1 tbs diced kalamata or other good olive
- 1 tsp Dijon mustard
- 1 tbs fresh lemon juice
- ¼ tsp ground black pepper
- extra virgin olive oil
- crumbled feta
Spread this mixture onto the toasted sour dough, sprinkle with the crumbled feta cheese. Drizzle with olive oil and bake in a 400 degree oven for 5 minutes or until hot.
