Protein Packed Tuna Melt

 For this recipe, you will need:

  • 2 slices thickly sliced sour dough bread, toasted cooled
  • 160 gram canned tuna
  • 3 tbs hummus

Flake the canned tuna into a bowl. Mix in the 3 tablespoons of hummus and add as much or as little as you like of the following

  • 1 stalk green onion 
  • 2 tbs diced cucumber
  • 1 tbs diced kalamata or other good olive
  • 1 tsp Dijon mustard
  • 1 tbs fresh lemon juice
  • ¼ tsp ground black pepper
  •  extra virgin olive oil
  • crumbled feta 

Spread this mixture onto the toasted sour dough, sprinkle with the crumbled feta cheese. Drizzle with olive oil and bake in a 400 degree oven for 5 minutes or until hot.
