Crab Butter Sauce

Ingredients:
- ½ cup unsalted butter
- 1 small shallot, finely minced
- 2 cloves garlic, minced
- ½ cup white wine (dry wine works best)
- ¾ cup heavy cream
- 1 lemon, juiced
- 6 oz of crab meat
- Salt and pepper, to taste
- Fresh parsley, chopped, to garnish (optional)

Make the Butter Base: In a medium saucepan, melt the butter over medium heat. Add the minced shallot and garlic and cook until fragrant and softened, for about 2 minutes, being careful not to burn the garlic.

Deglaze with Wine, Reduce: Add white wine and allow it to simmer until it reduces by half, about 3-5 minutes.

Add Cream and Lemon: Gradually add the heavy cream and lemon juice. Let it simmer, thickening a little, for about 5 to 7 minutes, stirring occasionally to prevent scorching.

Combine: Fold in the crab meat, being careful not to break the pieces up too much. Heat the sauce through without overcooking the crab. Season with salt and pepper if needed.
- Serve: Pull the sauce off the heat. Serve immediately over pasta or spooned over your favourite fish fillet (we love this with salmon or halibut). Garnish with fresh parsley if desired.
