What is Sablefish?

Sablefish, also known as black cod or butterfish, is one of the finest delicacies the North Pacific has to offer. Known for it’s intensely rich, satiny, buttery flavour the meat has a smooth velvety texture with delicate flakes. Our Sablefish are aquaculture raised in the pristine waters of Kyuquot Sound in partnership with Kyuquot-Checleseht First Nations. This native species is not genetically modified and uses no added chemicals making it a healthy option as sashimi or sushi. Thankfully, because they are hand raised and abundant, and because sablefish's taste, appearance and texture are similar to Chilean sea bass, sablefish is an environmentally superior alternative to sea bass, which is threatened in some fisheries.

How to Cook Sablefish 

Our Sablefish fillets are a very forgiving fish in the kitchen, due to their high fat content, making them a perfect choice for the novice chef who wishes to prepare something luxurious. In the kitchen, sablefish offers a striking yin-yang appearance—creamy white flesh juxtaposed against black skin but beware, the flesh have pin bones that must be removed when cooking. My Sablefish Party Pack and my marinade recipe.

This was the first time ordering from Organic Ocean. I've had meal kit boxes before, but never something like this. I love sablefish, it is very difficult to buy in Ontario, so I browsed the internet for a source. I clicked on Organic Ocean, and was totally impressed with their selection, and especially the commitment to making the world a better and healthier home for all life. The Sablefish Party Pack caught my eye instantly. I took the plunge and ordered! It arrived on the day promised, packed in recyclable or reusable materials. If it's your first time, a word of caution: read the insert first. The box is packed with dry ice! I touched it for a nano-second, and ouch! I didn't get burned, but watch out. However, the fish was perfectly packed, beautifully frozen. You could sous-vide it in its packaging, if you are into sous-vide. As for me, I marinated two filets overnight in a miso marinade. The next day, I wiped off the marinade (it had done its work), patted it dry and grilled it. It was BRILLIANT!! It tasted as if I'd spent hours on a cheffy recipe, but this is the marinade: 2 Organic Ocean sablefish filets 1/3 cup of light miso paste 1/4 cup mirin 1-2 tablespoons sugar (depending on how sweet you like it) 3 tablespoons Sake (if you don't have any, then white vermouth or dry white wine will do) Spread this all over the filets, and let them marinate, refrigerated, for 5 hours or up to a day and a half. When ready to cook (grill, cedar plank, broiler, baked, pan seared), then wipe of the marinade, blot dry and cook by chosen method until desired doneness is reached. Garnishes include minced parsely, minced chives, sliced scallions, lemon zest, and more! Enjoy! Spread it liberally all over the filets

Luxurious, Flavourful, Tender .... Recipe for Butter Basted Sablefish Included.

Wow! Do you want fish that tastes totally fresh, without fishiness? How about a fish so rich in beneficial oils that it is difficult to overcook? Does the idea of a fish with flaky but rich texture, and large, easily removed bones appeal to you? Then, Romeo, Sablefish is your Juliet! This is one of the healthiest fishes out there, and here is a recipe to create a special-occasion meal that can be made in a flash!! Here is a recipe that is so decadent, buttery and flavourful, but ready in about 10 minutes (plus another 5-10 prepping and chopping - depends on how quickly you chop). This recipe is my own invention, based on some lobster and salmon preparations that I have tried. This recipe serves three, or two large appetites. It is easily reduced or doubled by adjusting the ingredients Ingredients: 1 full sablefish portion (as you would order in this pack) divided into 2 or 3 portions; salt; pepper; 1 tblsp. oil of your choice (I used canola); 1/3 cup of butter, divided into three and cut in cubes; 4 cloves smashed garlic, divided (first use three, then the final clove); 1/4 cup chopped parsely; juice of 1 lemon; 1-2 tsp dijon mustard (to taste). Dry Organic Oceans Sablefish with paper towels; salt and pepper the skin side; heat up a 12 inch skillet on high heat and add oil; when oil is shimmering and lightly smoking, place fish, skin side down; season the top with salt and pepper. After about a minute, when the fish no longer sticks to the pan, reduce heat to medium low and add 2 parts of the butter. BASTE the fish continually (you are not going to flip it). When butter is melted, add 3 cloves of smashed garlic and continue basting until you can see the fish beginning to flake (you can test it with the edge of your spatula). At this point, remove pan from heat, remove fish to a plate (it will continue to cook by residual heat) Now add the rest of the butter and the remaining clove of garlic. When butter has melted, add parsley, lemon juice and a dollop of dijon mustard and whisk vigorously until parsley turns bright green and garlic is fragrant (about 1-2 minutes). Remove from heat, pour it into a bowl, give it a whisk. Your Sablefish is ready! Serve with the butter sauce, and lemon wedges (if you want - I find that they aren't necessary). Ok, all that butter is rather decadent, but this is so tasty! Skin lovers will love the crispy seasoned skin. Everyone will love the buttery smooth Sablefish. I hope that you try this and enjoy it! It's quick, easy, and delivers a great, luxurious meal in no time. Plus, you can enjoy it even more when you remember that Organic Oceans Sablefish is sustainably sourced, organic and from local Canadian businesses.
