Tsu-ma-uss is the combined Tseshaht and Hupacasath First Nations from the west coast of Vancouver Island. Together they share common fishing rights and catch and produce Wild Candied Chinook Salmon. The largest of all 5 wild salmon species, Chinook Salmon (also called Spring salmon) are traditionally caught using nets and then hot smoked with 4 simple ingredients: wild chinook salmon, sugar, salt and alder wood smoke. Packed into convenient ½ lb (227 g) packs makes it a perfect size for enjoying with others.
