What is Wild BC Rockfish?

There are over 35 species of rockfish found in the marine waters of British Columbia but Organic Ocean only supplies those which are harvested as ­directed bycatch from sustainable hook-­and-line fisheries. Rockfish typically weigh two to seven pounds and reach up to two feet in length. Often misrepresented and mislabelled as Pacific snapper or Rock cod, it is neither from the snapper or cod families. Rockfish is actually from the Sebastes genus which is derived from Sebastos - Greek for magnificent. And magnificent aptly describes the taste of rockfish which is characterized by its firm, lean and mild flavour.

How to Cook Wild Rockfish Fillets

The tasty white meated Pacific rockfish is a very versatile fish. From fried to grilled to steamed, you have plenty of preparation options. It's fantastic in almost any fish recipe, and if you have a recipe that doesn't specify a type of fish, rockfish makes a great choice. Because Wild BC Rockfish is somewhat of a blank slate, the cooking options really are endless. It can be incorporated into ceviche or a bouillabaisse, or the fish can be simply baked, sauteed, or pan-fried and topped with a light sauce. Rockfish can be deep-fried and is a great choice for fish tacos, as well as several Asian recipes that call for a white fish. Because of the flakiness, it is not recommended for grilling.

White fish

Sweet and tender from frozen in the oven with large onion slices, zucchini and carrot strips. 400 F for 30 minutes or so,,when it's sizzling it's ready!,,Serve with salad,,, Fabulous

Mediterranean bake

A sturdy white fish that pairs well with Mediterranean flavours of olives, tomatoes, garlic, onions, lime juice, thyme, and dried chili peppers. These fillets were so fresh they tasted like the ocean.
