When our new Chief Culinary Officer, Chef Robert Clark, started the Spot Prawn Festival in 2007, he was the executive chef at C Restaurant – a fine dining establishment that was known for its impressive seafood menu. The search for sustainable seafood and spot prawns sprouted out of necessity, as Chef Robert wanted to serve the best and freshest seafood available. He began asking questions, visiting fishermen, building relationships and forging new ways to hold onto local seafood that was being shipped overseas. That’s when he reached out to one of Organic Ocean’s founders and super spot prawn fishers - Captain Steve Johansen. Together, they worked through the Chefs' Table Society to create an event that has grown to become a highly anticipated annual destination festival drawing foodies from the Vancouver Lower Mainland and beyond.
Now 14 years later, the Spot Prawn Festival remains a go-to culinary fixture but this time as a virtual event. The Chefs’ Table Society of BC (CTS) has “deconstructed” the much-loved annual event with their chowder now sold on-line and delivered direct to your home. The signature event will be an online 3 course cooking tutorial featuring some of BC’s top chefs with BC spot prawns as the star.
The 2021 CTS Seafood Chowder is made of all natural ingredients - Ocean Wise seafood and shellfish (spot prawns, clams and ling cod), tomatoes, fish stock, onions, potatoes, celery, corn, fennel, fennel seed and parsley. Gluten free, this sustainable seafood chowder is a mouthwatering delicacy that is sure to please anyone who appreciates a great at home dining experience. This chowder is best cooked from a thawed state. To thaw, place in the refrigerator overnight for optimum results. As Chef Darren Clay, the president of CTS, says - “While CTS would like nothing more than to serve guests in-person at Fisherman’s Wharf, the chowder can now be enjoyed at home even after the season has ended!” And if you love this chowder, why not try our sexy spot prawn tails to really experience the amazing flavour these Canadian wild prawns offer.
The Chefs’ Table Society of British Columbia (CTS) is a BC province-wide collaborative that fosters essential dialogue between culinary professionals. They support innovative, sustainable programs that inspire, educate and nurture cooks, producers and regional food industries. They promote standards of excellence that strengthen our regional cuisines. To ensure a valued legacy for all professional cooks, the Society is working to establish the CTS Culinary Library of which funds from the sale of this chowder will go towards. @chefstablebc
